For 4 servings
Ingredients for the omelette
8 eggs
2oz of grated parmesan cheese
Salt and pepper
For the filling
5 oz of cooked ham
9 oz of soft cheese
7 oz of grilled zucchini
Extra virgin olive oil
Salt and pepper

Beat the eggs with grated cheese, salt, and pepper. Transfer the mixture to a 20 x 25 cm size pan (Butter and line with parchment paper)
Bake in a preheated oven at 180 degrees for 15 minutes.
When the omelette is ready, let it cool completely.
In the meantime, in a bowl, mix soft cheese, pepper, salt and oil. Mix until creamy.
Spread the omelette with soft cheese, ham, and grilled zucchini. Roll up the omelette with the help of a plastic wrap. The roll must be tight. Place it in the refrigerator for 1 hour.
When it is ready, place omelette on a platter; cut into slices to serve.
