Pancetta

Pancetta is cured pork prepared with the fat part of the animal’s belly. It is processed, salted, with flavours added and aged according to the oldest Veroni recipes. When cut, it is surrounded by a layer of white fat with “threads” of pink lean meat. Being tasty and with an intense aroma, pancetta is a fundamental element of many Italian culinary preparations and can be found in different types and formats: rolled, smoked, with or without rind, “coppata” (with coppa), “steccata” (cured between sticks) or flat pressed.
