Penne with Ragu, Veroni salami and vegetables

There is nothing like a bowl of pasta after a long day, try out our easy recipe with the full flavor of Veroni salami

INGREDIENTS

To serve 4 people you will need the following ingredients:

• 150g Veroni Salami
• 400g Penne Pasta
• 600g Tomato Passata
• 80g Minced Pork
• 20g of Cooking Fat
• 100g Zucchini
• 100g Eggplant
• 50g Extra Virgin Olive Oil
• 50g Onion
• 10g Parsley
• 1/2 Glass of White Wine
• Salt and Pepper

STEPS

1. Clean the onion and chop into small cubes. prepare the remaining vegetables by cutting into julienne strips
2. Cut the salami into thin strips and cut the cooking fat into small pieces
3. In a pan, pour in the olive oil and put in the onion, cooking until brown
4. add the minced pork, lard, salami and vegetables. Pour in the wine
5. Add the tomato passata and cook till the consistency is thick to your liking, season with pepper and salt to taste
6. In another pot, cook the pasta in salted water
7. Drain the pasta and return to the pot, mix in sauce and prepare in bowls garnished with chopped parsley
